Apparently I'm in the Halloween mood... Yesterday I brought back one of my all time fav go to lunches... couscous with peas and feta cheese. I ate this constantly through college, and now it's a staple lunch/breakfast at WLIO! It is one of the easiest and quickest meals slash side dishes to make and it does a great job as a double duty meal with leftovers.
But this round was different. The tomato couscous I bought got me thinking I should name this dish, "Ghosts in a Pumpkin Field!" What do you think?
